- 1/4 cups Cherry tomatoes
- 1/4 cups Mushrooms
- 1/2 cups Spinach
- 1 tbsp Ricotta
- 2 tbsp Olive oil
- 1/4 tsp Salt
- 1 pinch Pepper
- 1/2 cups Rice
Instrucciones

- 1Prepare your ingredients: wash and cut the cherry tomatoes in halves;Clean and cut the mushrooms in sheets;Wash spinach.
- 2In a pan, heating half of olive oil and sauté cherry tomatoes and mushrooms for 5 mins.Add the spinach and sauté for 2 more mins.Salpimentar.
- 3Beat the eggs slightly.
- 4In another skirt heating the rest of olive oil, throwing the eggs carefully and add sautéed vegetables.Spread the ricotta.
- 5Once the bottom part has curdled, with the help of a spatula bend it in half.
- 6Cook for 1st minute and serve immediately.
