- 1 cups Zucchini
- 1 units Egg
- 1 tbsp Butter
- 0.38 cups Flour (no powder)
- 1 bit Queso parm gratedo
- 1/4 tsp Nutmeg
- 1/4 tsp Salt
- 1 pinch Pepper
- 1/2 units Onion
- 200 grams Mushrooms
- 5 units Fresh asparagus
- 2 tbsp Oil
Instrucciones

- 1In a bowl, mix the finely grated zucchini with eggs, melted butter, flour, grated cheese, nutmeg, salt and pepper.
- 2Heat a saucepan over medium heat and placed 3 tbsp mixture zucchini, cook 2 minutes and goes round the pancake.
- 3Kitchen 2 mins more on the other side. Remove the pancake to a plate and repeat the procedure.
- 4Prepare the filling: In a skillet heat oil over low heat and cook chopped onions finite. Add the sliced mushrooms and asparagus tips (pre-cooked)
- 5Temperature increases to medium heat and cook a few minutes.
- 6Distributes the mixture in each of the pancakes, roll and serve.
