  • 1/4 cups White beans
  • 1/4 cups Black beans
  • 1/4 cups Chickpeas
  • 1/2 cups Frozen corn desg
  • 0.38 cups Onion
  • 3 tbsp Coriander
  • 1 units Lemon
  • 2 tbsp Olive oil
  • 1/4 tsp Salt
  • 1 pinch Pepper

    Soak the beans the night before. Cooking in cold water on medium heat for 1 hour or until soft. Reserve

    Prepare the ingredients: Cut cucumber, peppers, onion and tomato into small cubes; separating coriander leaves from their stems and chop finely; squeeze lemon and reserve juice.

    Cook corn according to the package instructions and set aside.

    In a bowl, put lemon juice, oil, salt and pepper, and whisk to emulsify. Add the chickpeas, corn and chopped vegetables, blend well and serve.
