  • 1 cups Watercress
  • 1 cups Arugula
  • 1/4 cups Whole nuts
  • 1/4 cups Cranberries
  • 1/2 units Fuji apple
  • 50 grams Blue cheese
  • 3 tbsp Balsamic vinegar
  • 1 tbsp Honey
  • 3 tbsp Olive oil
  • 1/2 tbsp Mustard
  • 50 grams Granulated sugar
  • 1 pinch Salt

    If you did the Batch Cooking: Put the green leaves in a fountain. Add blue cheese, caramel nuts and cranberries. See comfortable with the ready dressing.

    If you did not do the Batch Cooking, follow these steps:

    Wash green leaves, arrange at a source.

    In a pan adding the sugar, stir up to form a candy, once it is melted, add the nuts and with the help of a fork turn the nuts into the caramel. Once ready to put on a Silpat or a holly tray. Reserve

    Wash and chop the apple in segars (with or without shell, to taste).

    Shut up blue cheese.

    Make the vinaigrette with olive oil, balsamic vinegar, mustard, honey and salt.

    Add blue cheese, nuts and cranberries to mix of green leaves.
