- 1/2 cups Quinoa
- 1/4 units Onion
- 0.38 cups Red wine tetra
- 1/4 cups Queso parm gratedo
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 2 units Fish (Pippin)
- 1 tbsp Olive oil
- 1 units Lemon
- 2 tbsp White vinegar
- 50 grams Butter

- 1Prepare your ingredients: Chop the fine onion; Squeeze lemon juice.
- 2To prepare quineo: wash the quinoa well in a colander until it stops foam, put in a pot 1 cup of quinoa by 1 1/2 cup of boiling water, wait for it to boil and leave at low heat with toaster 15 mins.
- 3For the quinoa: in a pan add the oil with the onion, when it is transparent add red wine, cook it for 5 minutes, then add the quinoa, salt (using half of the pepper) and cook for 8 minutes, add the cheese Parmesan.
- 4Preheat oven to 180 degrees.
- 5For fish: Wash fish and leave dorming with salt, pepper and lemon juice for 15 minutes.
- 6Then take the oven for 20 minutes.
- 7For the butter sauce: in a pot add the vinegar and the rest of the pepper, let it boil until it drops half the preparation.
- 8In a pan melting the butter and let cool.
- 9Join the vinegar with butter and when it is going to serve on top of the fish it is heated.
- 10To serve, put the quinoa in the center of the plate, up the fish and finally the butter sauce.
