  • 1/4 units Red pepper
  • 1/4 units Onion
  • 1/2 cups Pumpkin
  • 1/2 teeth Garlic
  • 1/4 tsp Curry
  • 1/4 tsp Peppers
  • 1/4 tsp Salt
  • 3/4 cups Rice
  • 2 tbsp Oil
  • 1/2 cups Coriander

    Soak lentils the day before.

    To prepare rice: in a pot, add sunflower oil and pour the rice. Saute until almost translucent. Then add 1.5 cup boiling water for each cup of rice, add salt to taste, stir gently, cover and place over low heat for 20 minutes with toaster. At the end time, turn off heat and wait about 5 minutes.

    I soak shredded coconut 1 cup of water (per 50 g coconut) for 20 min, pass all the juicer, blend for 4-5 min, strain and ready, they will have a thick milk that we use as cream.

    In a saucepan saute diced red pepper, onion and garlic, and yellow squash. Add the herbs: curry, chilli color and salt, add the lentils and cover with boiling water. Expect boil and leave low heat, covered for 15-20 min or until lentils are soft, now add cream or coconut milk, we check well the time, we have a couple of minutes to the heat and serve with white rice sick and cilantro, is a delight!
