- 1/2 cups Skim milk
- 1/2 cups Flour (no powder)
- 2 tbsp Oil
- 250 grams Spinach
- 213 grams Ricotta
- 1.5 tbsp Butter
- 1 tbsp Cornstarch
- 1/4 tsp Salt
- 1 pinch Pepper
- 1 pinch Nutmeg

- 1Prepare the pancakes: In a bowl beat the eggs and incorporate the flour and milk, beat until a homogeneous shake
- 2Heat a skillet and brush with oil, add 2/3 cup of the shake and brown on both sides. Repeat the operation with the rest of the smoothie
- 3For the filling: in a medium pot over high heat boil water with salt. Add the spinach and wait for it to boil, cook for 1 minute. Stroke and with a spoon compressed to remove the water. Fine chopping
- 4Mix with ricotta and season at ease
- 5Use 3 cdas approx from filling by pancake. Align them in a fountain that can go baked.
- 6For white sauce: in a medium olla melt butter over medium heat, add milk, salt and cornstarch diluted in water (dilute per 2 cda (s) 1/4 cup). Cook over high heat always stirring until you release the boil, lower the fire and let it boil 2 mins always stirring. Season with nutmeg, pepper and salt to taste
- 7Pour on the pancakes and serve.
