- 160 grams Pasta (noodles)
- 1/4 cups Quinoa
- 10 grams Basil
- 2 tbsp Tomato sauce
- 1/2 units Onion
- 1/4 units Carrot
- 1.5 tbsp Wholemeal
- 1/2 tbsp Parsley
- 2 tbsp Olive oil
- 1/4 tsp Coarse salt
Instrucciones

- 1For noodles: cook the dough according to the package instructions. Drain, reserving a little cooking water.
- 2For the Quínoa: Wash the Quínoa very well to remove saponin, which gives a bitter taste. Put it in a pot and cover with cold water. Tapar and cook on low leak. Since boiling, count 10 mins. Let cool and separate the beans with a fork.
- 3For meatballs: sauté the onion into a pan with extra virgin olive oil, add water and cook by 30 mins approx. Mix the cooked quínoa, the fine grated carrot, the parsley, the onion, the wholemeal flour and a pinch of sea salt. Stir well until you get a homogeneous blend. Form 12 balls of the same size with the Hummders and bake at 180 ° by 5 mins.
- 4Heat the tomato sauce in a pan, add the noodles and the meatballs of quinoa.
- 5Serve and add fresh basil leaves and a splash of extra virgin olive oil.
