- 1 units Pepino
- 1 units Red pepper
- 1 units Avocado
- 80 grams Tofu
- 1/2 units Lettuce
- 4 units Rice paper
- 2 tbsp Olive oil
- 1/2 units Lemon
- 1 units Natural yogurt
- 1/4 tsp Coarse salt
Steps

- 1Wash, peel and cut carrot, paprika and cucumber (without seeds) in fine sticks.
- 2Wash and dry lettuce leaves.
- 3Peel and cut the avocados in sticks.Cut tofu sticks from a finger thickness.
- 4Dry tofu sticks with absorbent paper.Sauté in a pan with a little extra virgin olive oil.
- 5Hydrating each rice sheet in a container with cold water for 15 to 20 seconds, until soft.
- 6Extend the rice sheet of paper on a dry kitchen cloth and fill in comfortable.
- 7Fold the edges in and roll.
- 8Prepare yogurt sauce mixing it with extra virgin olive oil, lemon and salt.
- 9Spread the rolls in the sauce.
