- 2 units Lemon
- 1 units Eggplants
- 1.5 units Tomato
- 2 units Bay leaf
- 1/4 tsp Salt
- 1 pinch Pepper
- 2 tbsp Olive oil
Instrucciones

- 1Prepare the ingredients: tomatoes wash and cut into slices; wash and cut the eggplant into slices; squeeze the lemon juice.
- 2To prepare eggplant, sprinkle salt on them and abundant carrying a source of water. Let stand 1 hour to remove the bitterness, drain and set aside.
- 3Preheat oven to 220 ° C.
- 4In a bowl, mix tomatoes, aubergines, laurel and olive oil, season with pepper and bake until done (approx 30 mins. Go see that not dry).
- 5In the meantime, put the salmon fillets in a baking dish, adding a teaspoon of butter on each fillet and season with salt and pepper on both sides. Bringing fish to the oven for approximately 25 minutes or until done.
- 6Serve the fish accompanied by roasted eggplants and tomatoes. Optionally, sprinkle lemon juice over the salmon.
