  • 2 tbsp Olive oil
  • 63 grams Bacon
  • 1 pinch Pepper
  • 1/2 teeth Garlic
  • 1/2 cups White wine tetra
  • 1 units Egg
  • 1/4 cups Queso parm gratedo

    Put in a boiled water pot.Add salt and pasta.Cook about 8 MINS (strain and reserve the water from the paste to use it later)

    Heat a large pan over medium heat.Add olive oil and bacon (by 2 mins approx).Add pepper and garlic (previously grated) and cook 2 to 3 MINS MORE

    Add the wine and mix

    In a separate bowl, beat only the yolks, then for each yolk add 1/2 cup of the pasta water
  5. 5
    Once the pasta is smooth, add it directly to the pan with the bacon and oil
  6. 6
    Then pour the egg mixture on the paste.Mix quickly to cover the pasta without cooking the egg (rectifying water if necessary)

    Remove the pan from the heat and add cheese, pepper and a little salt

    Continue stirring the pasta until the egg mixture is thickened, 1 to 2 mins.Decorate with grated cheese
