- 500 grams Vacuno (plateada)
- 5 grams Bacon
- 3/4 units Onion
- 1.5 units Carrot
- 1 bit Celery
- 1/2 teeth Garlic
- 1 units Bay leaf
- 325 milliliters Red wine tetra
- 3 tbsp Olive oil
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1/2 units Lemon
- 1/8 units Lettuce
- 20 grams Spinach
- 20 grams Arugula
Instrucciones

- 1Prepare the ingredients: bacon chop fine; wash, peel and chop the onion pen; Wash, peel and cut carrots into slices; chop celery; Preheat oven to 140 °.
- 2In a large skillet, saute one third of the bacon olive oil with the garlic until golden brown.
- 3Add onion and bay leaves and cook for 5 more mins. Put this mixture into a large baking dish.
- 4In the same pan add another third of olive oil and seal the top (inside) of ribeye roll round on all sides to achieve an intense golden color.
- 5Remove the meat from the pan and place it over the vegetables and sauteed.
- 6Add wine to skillet hot to recover the caramelized juices.
- 7Pour wine to the source, season and bring the top (inside) round of ribeye roll to the preheated oven.
- 8Mintas bakes it, go bathing in their own juices meat.
- 9In a bowl, mix green leaves and season to taste with salt, the remaining olive oil and lemon. Serve with meat.
